Lemon Pepper Asparagus Salad

Inspiration comes to me in many forms. For example, at the farmer's market yesterday, I noticed asparagus was in season, so I picked up a couple of bunches knowing I could turn them into something yummy later. So asparagus went into my basket.
And when I woke up this morning, I could already hear the sounds of 25,000 runners right outside my window. The 25th Annual L.A. Marathon was large and in charge! The Boyfriend and I sat outside for a few hours, sipping smoothies and relaxing. For a minute I had marathon envy, but only for the amazing feeling you get after the race is over. I was way too tired today to even think about running myself.
And so we went to the grocery store. I decided to try a product I've seen many times before, but have never tried. Tempehtations went in my cart.

Then, when The Boyfriend took me to lunch later today, I eyed the amazing deli selections available, and knew my inspiration had to come together in the form of a salad. A cold salad, inspired by summer, of course!

Cold Lemon Pepper Asparagus Salad
Serves 6

2 Bunches Asparagus
1 Red Bell Pepper, cut into thin strips
3 Carrots, julienned
1/4 C. Sliced Kalamata Olives
2 Persian Cucumbers, sliced
3 C. Cooked Brown Rice
1 Package Tempehtations, Zesty Lemon flavor
Juice of 1 Lemon
2 Tbs. Vegenaise
Pepper, to taste

Directions

Prepare all of the veggies according to your liking. I used my new Julienne Peeler to cut the carrots. Where has this tool been all my life?

I sliced everything else into bite sized pieces.
Saute the Tempeh according to package instructions.

Mix the juice of 1 Lemon with 2 Tbs. Vegenaise. Remember when I visited the Follow Your Heart Market and Cafe?

I think it might be time for a trip back! I'm out of Vegenaise now!
I love lemons. How about you?

Mix everything together, and place in the refrigerator to cool down.

Once chilled, serve with lots of fresh grated black pepper on top!

I can't wait to eat this for lunch all week! And just in case you were wondering, you're stuck with me for another week! My first trip to Shanghai has been postponed until next weekend. I'm so excited I can hardly stand it.

  2. I love it! Somehow I missed that you went to the Follow Your Heart headquarters. That's a "cheese" factory I could get behind. Ever heard of Tillamook cheese? Yeah, I've been to more field trips there than any person should. Curd sample? No thanks.

  5. When I was a kid, I ate lemons as if they were oranges. And I can't drink my Diet Pepsi w/o a lemon wedge squeezed in it.

  7. I think lemons make a veggie dish! If I roast or steam veggie, I'm always adding lemon juice to it at the end. It's definitely a great way to break a person's habit of putting butter on their veggies.

    By the way, salad looks yumbo! Going to try the recipe.

  10. Um, yum. I LOVE tempeh! I've never tried Tempetations (I usually just eat it plain) but this looks so good!
