Vegan Heart-Shaped Mini Cheesecakes

When I saw a set of three mini heart-shaped spring-form pans in the Valentine's Day section at Target the other day, I knew I had to have them. And I knew just what to do with them! I've been wanting to make a vegan cheesecake for a while now, and this provided me with the perfect opportunity to do so.

There are so many vegan cheesecake recipes out there, but none really for plain mini cheesecakes. So I had to just go for it, big-girl style, and not look back. Which is exactly what I did. I think it's pretty good, but I might work on some other versions, just in case in the future I don't have one or more of these ingredients on hand.

Vegan Heart-Shaped Mini Cheesecakes
Makes Two 4 1/2" by 2" Cheesecakes

Equipment Needed:
Mini Cheesecake Pans (Spring-form)
Wax or Parchment Paper
Coffee Grinder, Blender or Food Processor


8 Graham Crackers (I used Trader Joe's Cinnamon Grahams)
1 1/2 Tbs. Melted Earth Balance
2 Tbs. Brown Sugar

Crumble the graham crackers in either coffee grinder, blender or food processor. Add the melted Earth Balance and Brown Sugar and mix until crumbly. Take a sheet of wax or parchment paper and trace the bottom of your spring-form pan. Make two. Place the wax or parchment paper in the bottom of the pan, and press the crumbly crust mixture into the two pans.
Bake at 35o degrees for 8 minutes. Take out of oven, and allow to cool while you make the filling.

Cheesecake Filling
1/2 C. Tofutti brand Better than Cream Cheese
1/2 C. Tofutti Sour Cream
1/4 Tsp. Guar Gum
1/4 Tsp. Xanthan Gum
1/4 C. NuNaturals Stevia Baking Blend
1/2 C. Coconut Milk (not light)
1 Tsp. Vanilla Extract
2 Tsp. Lemon Juice

Mix all ingredients by hand in a bowl with a spatula, until smooth. Smooth out any lumps. Pour over the crusts, leaving about 3/4-1" room at the top of the pan. Bake at 300 degrees for 50 minutes. Don't peek! Take cheesecakes out of the oven, and place on a plate. Put immediately into the refrigerator. Allow to cool in the fridge overnight. Before serving, remove spring-form pan and place on a serving plate. The cooked and cooled cheesecakes will look like this:

I topped mine with a raspberry sauce, and garnished with some fresh raspberries.

Raspberry Sauce
1/2 C. Frozen Raspberries
1/4 C. Sugar

Cook over medium heat until thick and saucy. Pour over cheesecakes and top with fresh raspberries. Serve!
