A Pretty and Perfect Day

Following some bad sushi last night, my weekend started to turn around. There was camaraderie with friends (and sadly my dear friend Leah, I have yet to chop-chop my goldilocks into bangs...soon, promise!)

Then this morning I woke up, the sun was shining, and I had my very favorite Running Buddy waiting for me in Santa Monica. We strolled about (no running...see reference to bad sushi above, my poor tummy was killing me) and got coffee from the Coffee Bean & Tea Leaf (I got a soy double-vanilla tea latte) then we hit up the farmer's market (my favorite place on earth) and picked up some amazing food for the next week.
Some pictures I took walking along the water:

Highlights of the day included Running Buddy Selena spotting a 3-legged parsnip that most definitely had phallic references:

The flower stand:

And various and wonderful veggies:

Then I went over to The Boyfriend's house, and made him Italian Eggs with locally grown eggs from "Happy Hens", sold to me by the woman who owns the hens and promised me they were, indeed, happy, and organic basil and tomato, all from the farmer's market.

Italian Eggs
Serves 2

4 Whole Eggs + 2 Egg Whites
1/8 C. Chopped Fresh Basil
1/4 C. Soy Milk (unflavored and unsweetened)
Drizzle of Extra-Virgin Olive Oil
Kosher Salt and Pepper, to taste
2 Tomatoes, sliced on the side

Slice tomatoes and arrange on plate. Sprinkle tomatoes with salt and pepper. Whisk eggs, basil and soy milk together, drizzle a skillet with EVOO and pour in the egg mixture. Using a non-stick spoon, scramble the eggs until cooked.

Then, later, I had a massage from the best masseur in the world, Kelly. If you're in L.A., e-mail me and I'll give you her info. Best yet, I get the massages through my chiropractors office, so I only pay a $15 co-pay for a one hour massage. Pretty awesome, huh?

Now, I'm brainstorming dinner which is going to include quinoa and those fabulous artichokes from the farmer's market. I'm thinking it's going to become this Monday's Meatless Monday post for sure.

And guess what tomorrow is? A GIVEAWAY!!! So check back tomorrow, because this giveaway has two winners!!!

Hope you are all having a great weekend!
