Weekly Eats and Chirstmas Presents!

I've been super busy for the last few days, hence the lack of posting. I know you would never complain, and say, "Hey, Lady! Where have you been?" but I have some friends in real life who carefully remind me that it's been a day or two since I've blogged (thanks, Megan!!!) and thus I felt the need to explain myself.

A good portion of my time lately has been spent playing with my new toy:

An Ipod Touch The Boyfriend gave me for Christmas. Since I'm leaving on Christmas Eve to go back home, we did our Christmas this weekend. Slightly obsessed is one way of describing how much I love this thing.

Look what you can do on the Ipod Touch? You can go to my blog! It's quite frankly, amazing. But back to the weekly eats post I've also been slacking on.

This week, I had well-rounded collection of absolutely delicious eats.

Chocolate Maple Chia Oats

Chocolate Maple Chia Oats

1 Packet Maple and Brown Sugar Oatmeal (I used Quaker High Fiber Maple and Brown Sugar)
3/4 C. Chocolate Almond Milk
1 Tbs. Chia Seeds

Wait at least 30 minutes after mixing all ingredients together to allow chia seeds to absorb some of the milk, and microwave for one minute.

1/3 C. Uncooked Quinoa
2/3 C. Chocolate Almond Milk + more for topping
1 Banana
10 Drops Cocoa Extract (I use NuNaturals Cocoa Extract)
10 Drops Vanilla-flavored Stevia Extract (I use NuNaturals Vanilla Stevia)

Bring quinoa and chocolate milk to boil in saucepan on stove. Cover and simmer for 12-15 minutes, stirring a few times and watching to prevent burning. Once cooked through and all milk has been absorbed, add banana, cocoa extract and stevia and top with more chocolate milk.

Salad with Brussels Sprouts, Grape Tomatoes, Green Beans, Artichoke Hearts, Chick Peas and Cucumber

Simple Red Beans and Rice with Red Wine Vinegar and Seasoned Salt

Carbs In A Bowl
Egg-Free Noodles, Potato, Celery, Kale and Dijon Dressing (1 tbs. Veganaise, 1 tbs. White Wine Vinegar, 1 tbs. Dijon Mustard, Seasoned Salt)


Broccoli Salad with Carrots, Celery, Kale and Tomatoes

1 Large Apple cored and sliced
Cinnamon
10 Drops Vanilla-flavored Stevia Extract (I use NuNaturals Vanilla Stevia)

Topping:
3 tbs. Earth Balance Buttery Spread, melted
1/4 C. Oats
3 tbs. Brown Sugar

Place apple slices in a baking dish, sprinkle with cinnamon and vanilla-flavored stevia. Mix topping ingredients together, and sprinkle over apple. Bake at 370 degrees for 35-40 minutes, until apple is soft and topping is crisp.

Serves 2.

    I gave up my iPhone for a day. Got a Blackberry and HATED the silly thing. I returned it and all is right in the world again! :)
