Erin Eats Thanksgiving!

I've been having some super delicious eats lately, thanks to some Thanksgiving-inspired fare. The one good thing about living so far from home is the lack of leftovers in my fridge. While I normally love leftovers, having the temptation in my fridge to eat such delicious things as candied sweet potatoes and corn pudding more than once is something I do not need. And so I give you my weekly Erin's Eats post!

There was my plate at Thanksgiving dinner...

Sweet Potatoes, Mashed Potatoes, Green Beans, Stuffing, Corn Pudding and my Grandma's Famous Cranberry Relish

Erin's Grandma's Famous Cranberry Relish
1 Bag of Fresh Cranberries
1 Granny Smith Apple (cored and cut into chunks)
1 Whole Orange (seeded and cut into chunks, with peel on)
3/4 Cup White Sugar (I know, I know, so bad...but it's tradition! And SO good.)
Blend in food processor until well-mixed, should be the consistency of a smoothie.

Lots of good wine (that's my mom and little bro in the background!)


Some Pumpkin Pie Oatmeal...

Pumpkin Pie Oatmeal
1 Packet of Maple and Brown Sugar Oatmeal OR 1/2 Cup Oats
1/2 Cup Milk of Choice (I use Trader Joe's Vanilla Soy Milk)
1/4 Cup Pumpkin (I use Trader Joe's Organic Pumpkin)
10 Drops Vanilla-flavored Stevia Extract (I use NuNaturals Vanilla Stevia)
Small Handful Chopped Raw Walnuts

Fruit Salad...

Fresh Figs, Raspberries, Blackberries, Kiwi, Guava and Asian Pear

1/2 Cup Milk of Choice (I use Trader Joe's Vanilla Soy Milk)
2 Tbs. Chia Seeds (I use Chia Seeds from Chia Seeds Direct)
10 Drops Vanilla-flavored Stevia Extract (I use NuNaturals Vanilla Stevia, of course!)

Dinner Salad...

Yellow and Red Cherry Tomatoes, Asparagus, Avocado, Lettuce, Tofu

Yum. Thanksgiving. Luckily, Christmas is only three weeks away!!!
