Erin Eats (Almost) Everything

That's what I would have called this blog if I had known that three months into it I would suddenly eliminate entire food groups from my diet. If I had never read Skinny Bitch and had one of those pesky things called a conscience creep though my veins and tell me I could be doing better. I know we can all do better. I could run faster, I could hug tighter, I could laugh louder. I could try not to get so stressed out and so damn sensitive when someone is having a bad day and I take everything they say so personally.
Eating better is one of those things I could automatically control. It took about two point five seconds to swallow that last bite of bad food and vow to myself, the animals and the planet that I was at least going to try.
I am starting a weekly round-up of my eats, the ones that won't bore you or gross you out (I've been known to come home, open the refrigerator, and just stand there, eating green olive after green olive until the jar is gone...and I'm not sure I'm willing to photograph that for you.) I don't know if it will happen on Friday or Saturday or Sunday, but it will be one of those days. Today is the first of those posts. I hope you enjoy.

Frosted Carrot Cake Overnight Oats

For the Oatmeal:
  • 1/3 C. Old Fashioned Oats
  • Scant 1/3 C. Vanilla Soy Milk
  • 10 drops NuNaturals Vanilla Stevia
  • 1 Carrot, finely grated
  • Small Handful Walnuts, chopped
  • 1 Tbs. Ground Flaxseeds
Place all ingredients into a container, cover and place in your refrigerator overnight. In the morning, stir and top with frosting.

For the Frosting:
  • 1 Tbs. Tofutti Better Than Cream Cheese
  • 1 Tsp. Agave Syrup
Mix together until smooth, drizzle over oats, and enjoy!

Steel-Cut Oatmeal with Walnuts, Coconut Oil, and Maple Syrup

My Basic Green Monster

  • 1 C. Vanilla Soy Milk
  • 1 Banana
  • 10 drops NuNaturals Vanilla Stevia
  • 3 C. Spinach
  • 2 Tbs. Hemp Protein Powder
  • 1 Tbs. Ground Flax Seeds
  • 1/2 C. Frozen Wild Blueberries
  • 1/2 C. Frozen Strawberries
Heirloom Tomato Salad with Fresh Basil, Sea Salt, Black Pepper, Organic Extra Virgin Olive Oil and Balsamic Vinegar


Winter Salad with Carrots, Sweet Potato, Lentils, Marinated Tofu, Chick Peas and Hearts of Palm


Simple Warm Potato Salad


  • 1 Potato, cut into cubes and cooked
  • 2 stalks celery finely chopped
  • 1 Tbs. Follow Your Heart brand Veganaise
  • 1 Tbs. White Wine Vinegar
  • 1 Tsp. Dijon Mustard
  • Lawry's Seasoned Salt for Garnish
Scarlett Quinoa (recipe here) with Frisee and Artichokes


Beet Green Salad with Slivered Beets, Hearts of Palm, Trader Joe's High Lycopene Tomatoes, Zucchini and Artichokes


Salad of Sweet Potato, Zucchini, Grape Tomatoes, Avocado, Edamame and Celery

  8. Lordy, lady, you've been eating so well! I love everything and am pretty darn hungry just looking at it. Dinner was 2 hours ago... am I allowed to eat those carrot cake oats now?
