Occasionally, I wake up craving for oatmeal cookies for breakfast. Of course, I don't ever have oatmeal cookies for breakfast, but then I started thinking about that sign I saw recently that said, "Do you think those on the Titanic wish they had eaten dessert?" So I came up with a recipe that I think tastes exactly like oatmeal cookies, and is clever enough to sneakily fit into the "breakfast" category. Next time I wake up wanting oatmeal cookies for breakfast, I'll be prepared!
Then I remembered Co-worker Donna also loves both oatmeal cookies and granola, so I packaged some of it up for her into a classic Ball jar, and tied it with a gingham ribbon and a silk flower I had lying around. I'm sure she'll love to find this on her desk come Monday morning.
Oatmeal Cookie Granola
Makes: 8-10 Servings
8 C. Oatmeal
1 C. Packed Brown Sugar
1/4 Tsp. Nutmeg
1 Tsp. Cinnamon
1/2 Tsp. Kosher Salt
1 C. Raisins
1/2 C. (1 Stick) Unsalted Butter
2/3 C. Honey
3 Tbs. Pure Vanilla Extract
Preheat oven to 300 degrees Fahrenheit. Combine Oatmeal, Brown Sugar, Nutmeg, Cinnamon, Salt and Raisins in a bowl.
Melt Butter and Honey over low heat until it simmers, then remove from heat and add Vanilla immediately. (Spray your measuring cup with non-stick spray to make sure you get all the Honey out).Pour over dry ingredients and mix thoroughly.
Spread onto two non-stick cookie sheets (I lined mine with non-stick aluminum foil for easy clean-up). Bake for 20-25 minutes. Allow to cool completely prior to storing in jar.
