The. Best. Salad. Ever.

Serves 2-4
Prep Time: 10 Minutes

1 Head Mild Butter Lettuce
1 Large Red Tomato
1 Orange Heirloom Tomato
1/2 C. Sliced Hearts of Palm
3-4 Artichoke Hearts
2 Tbs. Mild Pepper Rings
1 Cucumber, Sliced and Peeled
1 Tbs. Capers
1 Tbs. Vegan Bacon Bits
2 Tbs. Rice Wine Vinegar

Chop all Vegetables to desired size. Toss with Rice Wine Vinegar, and top with Bacon Bits and Capers. Serve!

I have recently been slightly obsessed with a couple of things. This salad is one of them.
A big shout out to God and my friends at the Farmer's Market for growing such beautiful vegetables this summer! With out you, this salad wouldn't exist. And in case you're wondering, there is no dressing. Just the rice wine vinegar. If you can find home-grown tomatoes, I find they are usually so juicy that they practically make their own dressing in this salad, so you don't really need any extra. A sprinkle of salt on the tomatoes with further intensify their juicing ability, FYI.
